== Ingredients ==

* 3 cups dried black-eyed peas, rinsed
* 2 small tomatoes, chopped
* 1 large yellow onion, chopped
* 1 2” piece ginger, chopped
* 2 cloves garlic
* 4-6 green Thai, serrano, or cayenne chilies
* 2 Tablespoons ground coriander
* 1.5 Tablespoons salt
* 1 teaspoon turmeric
* 1 teaspoon ground cumin
* 1 Tablespoon brown sugar
* 9 cups water
* 1 can coconut milk

== Directions ==

# Grind tomatoes, onion, ginger, garlic, and chilies in a food processor.
# Add this mixture to the slow cooker along with the coriander, salt, turmeric, ground cumin, brown sugar, and water.  Add black-eyed peas.
# Cook on high for 7 hours.
# Add coconut milk 10 minutes before the cooking time ends.
