Ingredients

  • 3 cups pressure-cooked chickpeas, drained (reserve cooking liquid)
  • 2 - 3 large cloves roasted garlic OR 2 - 3 small cloves raw garlic, chopped
  • 2.5 Tablespoons sesame tahini
  • 1 Tablespoon olive oil
  • 3 - 4 Tablespoons fresh lemon juice
  • 0.5 teaspoon ground cumin
  • 0.5 teaspoon ground coriander
  • Dash cayenne pepper
  • 1 teaspoon sea salt
  • 0.25 - 0.67 cup chickpea cooking liquid, vegetable stock, or water

Directions

  1. In a food processor or blender, puree the chickpeas with the garlic, tahini, olive oil, lemon juice, spices, and salt.
  2. Thin to a preferred consistency by blending in the liquid.
  3. Taste and adjust.
  4. Enjoy!
