Ingredients
- 3 cups pressure-cooked chickpeas, drained (reserve cooking liquid)
- 2 - 3 large cloves roasted garlic OR 2 - 3 small cloves raw garlic, chopped
- 2.5 Tablespoons sesame tahini
- 1 Tablespoon olive oil
- 3 - 4 Tablespoons fresh lemon juice
- 0.5 teaspoon ground cumin
- 0.5 teaspoon ground coriander
- Dash cayenne pepper
- 1 teaspoon sea salt
- 0.25 - 0.67 cup chickpea cooking liquid, vegetable stock, or water
Directions
- In a food processor or blender, puree the chickpeas with the garlic, tahini, olive oil, lemon juice, spices, and salt.
- Thin to a preferred consistency by blending in the liquid.
- Taste and adjust.
- Enjoy!
