Ingredients
- 3 cups dried black-eyed peas, rinsed
- 2 small tomatoes, chopped
- 1 large yellow onion, chopped
- 1 2” piece ginger, chopped
- 2 cloves garlic
- 4-6 green Thai, serrano, or cayenne chilies
- 2 Tablespoons ground coriander
- 1.5 Tablespoons salt
- 1 teaspoon turmeric
- 1 teaspoon ground cumin
- 1 Tablespoon brown sugar
- 9 cups water
- 1 can coconut milk
Directions
- Grind tomatoes, onion, ginger, garlic, and chilies in a food processor.
- Add this mixture to the slow cooker along with the coriander, salt, turmeric, ground cumin, brown sugar, and water. Add black-eyed peas.
- Cook on high for 7 hours.
- Add coconut milk 10 minutes before the cooking time ends.
