Chana Saag

Ingredients

  • 2 T olive oil
  • 1 small onion, minced
  • 2 cloves garlic, minced
  • 1 T grated fresh ginger
  • 1 lb assorted greens, washed, pieces
  • Zest of 0.5 lime
  • 1 t cumin powder
  • 0.5 t tumeric
  • 0.5 t coriander
  • 0.5 t garam masala
  • 2 T vegan chicken-flavored bouillon
  • 1 can chickpeas or 1.5 cup homemade
  • Salt to taste
  • Rice for serving

Directions

  1. Saute onion, then garlic
  2. Add onion, garlic, ginger, greens, spices, water, bouillon
  3. Cook on low for 6-8 hours
  4. 30 minutes before serving, blend with immersion blender
  5. Add chickpeas and lime zest
  6. Serve over rice
