Chana Saag
From Boldhens
Ingredients
- 2 T olive oil
- 1 small onion, minced
- 2 cloves garlic, minced
- 1 T grated fresh ginger
- 1 lb assorted greens, washed, pieces
- Zest of 0.5 lime
- 1 t cumin powder
- 0.5 t tumeric
- 0.5 t coriander
- 0.5 t garam masala
- 2 T vegan chicken-flavored bouillon
- 1 can chickpeas or 1.5 cup homemade
- Salt to taste
- Rice for serving
Directions
- Saute onion, then garlic
- Add onion, garlic, ginger, greens, spices, water, bouillon
- Cook on low for 6-8 hours
- 30 minutes before serving, blend with immersion blender
- Add chickpeas and lime zest
- Serve over rice
