Goan Black-Eyed Peas

Ingredients

  • 3 cups dried black-eyed peas, rinsed
  • 2 small tomatoes, chopped
  • 1 large yellow onion, chopped
  • 1 2” piece ginger, chopped
  • 2 cloves garlic
  • 4-6 green Thai, serrano, or cayenne chilies
  • 2 Tablespoons ground coriander
  • 1.5 Tablespoons salt
  • 1 teaspoon turmeric
  • 1 teaspoon ground cumin
  • 1 Tablespoon brown sugar
  • 9 cups water
  • 1 can coconut milk

Directions

  1. Grind tomatoes, onion, ginger, garlic, and chilies in a food processor.
  2. Add this mixture to the slow cooker along with the coriander, salt, turmeric, ground cumin, brown sugar, and water. Add black-eyed peas.
  3. Cook on high for 7 hours.
  4. Add coconut milk 10 minutes before the cooking time ends.
